Finding Confidence in God No Matter What with Erin Warren

Life rarely goes as planned, particularly when we rely on our own plans rather than God’s. So when things go awry, our faith in His faithfulness may waver. And yet God’s faithfulness is not tied to our earthly circumstances but rather to His promises in Scripture. In Everyday Prayers for Faith: Finding Confidence in God No Matter What, author Erin H. Warren unpacks the precious promises of God that are worth far more than anything this world has to offer.

ERIN’S CHOCOLATE PEANUT BUTTER BOULDERS

This recipe is a lower-sugar, higher-protein alternative to standard Buckeye Balls. They are not overly sweet, which allows the peanut butter to shine, and the dark chocolate brings a perfect balance and smooth finish. Feel free to use semi-sweet chocolate if you prefer.

INGREDIENTS:

16oz Natural Peanut Butter (just peanuts – no other ingredients)

1 teaspoon Kosher Salt 

1 cup Powdered Sugar

2 ounces Unsalted Butter, Softened

1 teaspoon vanilla

4 cups Crispy Rice Cereal

1 bag Dark Chocolate Chips

3 teaspoons of Coconut Oil or Vegetable Shortening

 

DIRECTIONS:

  1. In a large bowl, add the peanut butter (and oil from the jar) and salt. Using a hand mixer, mix on medium speed until smooth.
  2. Add in the powdered sugar, butter, and vanilla. Mix again on medium until smooth.
  3. Add the crispy rice cereal and stir with a large spoon or spatula until combined.
  4. Line a baking sheet with foil or parchment paper. Using a tablespoon cookie scoop, firm pack the scoop with dough and spoon it onto the sheet. (You will want firmly packed boulders, otherwise they will fall apart when dipping)
  5. Refrigerate the sheet and boulders at least an hour.
  6. When ready to dip, melt the chocolate chips and coconut oil (or vegetable shortening) over a double boiler until smooth.
  7. Insert a skewer or toothpick into the chilled boulder and dip in the chocolate, covering the bottom and sides and place back on the baking sheet. Repeat with all the boulders. 
  8. Chill the boulders one more time for about two hours or until the chocolate is set. Enjoy!
